Cold Brew with Toddy Large

Cold brew solution for cafés

ALL you need:

  • Toddy Commercial brewer: includes brewing container of 20 litres, lid,
    tap, reusable filter and 10 single-use paper filters

STEP 1

Place the reusable filter in the Toddy brewing pot by stretching the elastic band around the pot. Place the filter bag inside the reusable filter with the mouth of the bag facing upwards. Make sure that the tap is closed and points towards the container.

STEP 2

Measure 2 kg of coffee in the filter. Use coarsely ground coffee or portion bags (7 x 300 g PKJ).

STEP 3

Pour 6.5 litres of cold water evenly into the filter, making sure that all of the coffee powder is wet.

STEP 4

Close the filter bag using the ribbon provided. Leave the coffee plenty of room to move inside the filter bag as too tightly packed coffee powder will not brew properly.

STEP 5

Pour more water (6.5 litres) into the Toddy. 

STEP 6

Cover the pot with a lid and allow to brew for 14–16 hours in room temperature.

STEP 7

After brewing, pour the coffee extract into suitable containers and keep them in the fridge in tightly closed containers with a lid (the extract will keep for about a week in the cold). There will be about 9 litres of coffee extract. If the tap becomes blocked, remove the coffee powder carefully from the tap.

STEP 8

Lift the reusable filter and the coffee grounds out of the brewing pot. Handle the filter with care as it can be fragile when wet and tear. Dispose of the single-use filter bag and coffee grounds with biodegradable waste. 

HOW TO CLEAN TODDY COMMERCIAL BREWER:

Place the reusable filter in a mild Puly solution to soak for an hour and rinse carefully afterwards. Wash the Toddy brewer with a Puly solution, rinse well and allow to dry.
